EVOO DOP Tuscia is produced in the northern Lazio area not far from Tuscsny and Umbria. This area was in the heart of the Zone called home by the ancient Etruscans(hence the name). The olive featured in this oil is called Caninese and is an ancient cultivar of this zone. This EVOO has been given special recognition as a Presidio Slow Food for maintaining excellence in ancient food traditions.
The olives are cultivated by hand using the ancient brucatura method in October. Features a full body with layered vegetable and herb notes with balanced pungency and spice.
