Fregola is ancient form of artisanal oven roasted couscous from the island of Sardinia. It has been made on the island for over 1000 years. It was introduced from North Africa and is directly related to couscous but larger in size and features en extra dynamic of flavor from oven roasting. It is made simply by rolling small balls of semolina flour and water and then fire roasting.

Known also as fregula, fregua, succu, casca or pistitzone depending where you are on the island. The name comes from Latin ‘ferculum’ which means crumbs.
Typically served warm with seafood, sauces or in soups. It is fantastic cold in salads. Can be used in place of couscous and orzo in any recipe adding a full bodied, nutty flavored, toasted dimension.
